Healthy Recipe Poached Lapu-lapu Fillet with Cheesy Tomato Basil

A fast and healthy cooking procedure, poaching ensures that your dish is moist and flavorful.

Serves 6 Prep Time 10 minutes Cooking Time 12 minutes

Ingredients:

  • 6 lapu-lapu fillets, skinned
  • juice of 1 lemon
  • 2 tablespoons chopped shallots
  • 12 basil leaves
  • 2 small tomatoes, sliced into rounds
  • 250 grams mozzarella cheese, grated
  • 1/2 cup extra virgin olive oil
  • salt and pepper to taste
  • 2 1/2 cups fish stock

Directions:

  1. Preheat oven to 250°F.
  2. In a baking pan, arrange fillets then drizzle with lemon juice.
  3. Sprinkle with chopped shallots. Arrange basil leaves on top, followed by the sliced tomatoes.
  4. Sprinkle with grated mozzarella cheese.
  5. Drizzle top with olive oil and season with salt and pepper.
  6. Finally, slowly pour fish stock until halfway through fillets.
  7. Poach fish in the oven 12 minutes or until done.
  8. Discard poaching liquid after cooking.
